Salary: $65,000–$90,000 + Bonus + Very Competitive Benefits

Location: Washington, DC and Cleveland, Ohio

This is an extraordinary opportunity for a sushi professional with refined technique, a strong leadership presence, and an unwavering commitment to quality and consistency.

As Head Sushi Chef, you will work alongside the Executive Chef to execute a high-volume sushi program that honors tradition while pushing creative boundaries. You’ll be hands-on in the kitchen, managing operations, mentoring staff, and elevating every plate that leaves the line.

What You'll Bring:

  • 2–3 years’ experience as a Sushi Chef in a high-volume, fast-paced Japanese kitchen
  • Advanced knife skills, fish handling expertise, and meticulous attention to detail
  • Strong leadership to inspire, train, and support a cohesive sushi team
  • Passion for quality, precision, and exceptional guest experiences
  • Experience managing prep schedules and labor costs
  • Deep knowledge of food safety and sanitation protocols
  • Ability to stay calm under pressure and manage multiple tasks
  • Balanced leadership style rooted in accountability, support, and growth
  • Clear communication and coaching skills

Your Role:

  • Partner with the Executive Chef to integrate the sushi program into overall culinary operations
  • Lead daily production, prep, and service with a focus on consistency and execution
  • Oversee sourcing, storage, and rotation of all sushi-grade fish and ingredients
  • Assign prep tasks and maintain high standards for presentation and technique
  • Demonstrate and train staff on both traditional and contemporary sushi methods
  • Expedite orders with accuracy, efficiency, and artistry
  • Build and maintain team schedules in line with labor targets
  • Ensure a clean, organized, and health-code-compliant sushi bar at all times
